Congratulations to Cullen Wines Apprentice Nick Young winning Silver in State Finals
Nick Young a 2nd year apprentice at Cullen Wines restaurant won silver in the recent South West Apprentice of the Year competition in Perth.
The intense competition used pre-set, challenging ingredients and involved preparing a 3 course meal from scratch under time constraints. Nick silver medal winning dishes were;
Entree: Mushroom Assiette
Main: Rolled Oyster blade, served with asparagus, broad beans, fondant potatoes and a chocolate cinnamon sauce.
Dessert: Citrus and Polenta Shortbread with Pistachio infused set cream, honey and orange jelly served with Pistachio Praline and fresh orange.
Nick said "the experience of competing was a great way to benchmark ourselves against other aspiring chefs and gave us an idea of our progress rated against fellow students."
