This wine provides further confirmation of the extraordinary quality of 2007
as a vintage for white wines in Margaret River. The delightful characteristics of this wine are the result of a careful selection of the varieties used for the blend and subsequently ensuring that the individual contributions of each great variety produced an optimal result. This wine, which was tank fermented, consisted of 51% Sauvignon Blanc, 28% Semillon, 18% Chardonnay and 3% Verdelho. Even though the contribution by the last of those varieties was small, our recent tasting showed that it still added significant, positive characteristics to the wine.

Colour: Straw colour with green tinges.

Bouquet: Complex blend of fresh custard apple, lemon and lime aromas.

Palate: Vibrant, rich, round and complex, reflecting the range of varieties in the blend. The great strength of Chardonnay in 2007 dovetails perfectly with the citric flavours provided by the other varieties. Great acid finish.

Cellaring: Drinking very well now and will develop for two to three years.

Food: All crustacean and fish dishes.
