2021 Legacy Series Fruit Day Kevin John Chardonnay

Kevin John wanted to improve the breed and these small batches are made as an experimental series to make the best chardonnay.
The 2021 Legacy Series Fruit Day Kevin John Chardonnay is an artisanal wine, hand harvested on a biodynamic fruit day during the 2021 harvest.
After hand sorting these bunches were placed in amphora for two days skin contact, before pressing into 50% new puncheons to ferment, then and resting in oak for 8 months before bottling, with no fining or filtration.

2021 Vintage Report

The 2021 harvest was defined by Covid and staff restrictions for hand harvesting. The low yields ensured that the crop was harvested at optimal condition and ripeness. Bird pressure was high and rain events during the growing seasons and also throughout harvest provided challenges.

In spite of these adverse conditions, in Wilyabrup, we finished harvest in good time and are very happy with the wines. Standout varieties: chardonnay, sauvignon blanc, cabernet sauvignon.

Colour: Light gold Cellar: Enjoy now or for up to 20 years Bouquet: Honeycomb, ginger, gardenia, honeysuckle, lime, lemon Food: Crayfish, squid, or abalone Palate: Peaches and cream, vanilla, ginger, orange, honey, oregano, river stone. The very tightly wound palate takes this young wine on a journey through the palate, travelling with speed to give great length and persistence of flavour. With no fining or filtration it has great depth of flavour and complexity

    We have observed that Moon Opposite Saturn Harvest (MOSH) gives us wines which are vibrant, mineral and full of life, so we harvested separately on this day, which was a flower day harvest and whole bunch pressed to barrel where the wines went through natural fermentation.

    Whole bunch pressed and fermented with wild yeast in Flower Day Barrels. The oak was harvested and coopered on a Flower Day according to the biodynamic calendar. We find this gives the wine a more minerality and line.
